Linguiça Tradicional de Maracaju (Traditional Maracaju Sausage) is a sausage made exclusively from beef, born from the tradition of the colonizers from Minas Gerais, including Great-Great-Grandfather Nestor Pires Barbosa In Memoriam. The production of homemade pork sausages began, but was replaced by beef due to the abundance of livestock in the state.

In 2019, Maracaju Sausage became part of the trade protection agreement between Mercosur (Southern Common Market) and the EU (European Union), and the delicacy from Mato Grosso do Sul is now on the list of 220 items protected by the agreement.
