Marked granulation and exquisite taste are just some of the qualities found in Gran Formaggio. In order to attain these distinct characteristics, we strive for excellence at every stage of the production process - from the care given to our Holstein cows, who yield the highest quality milk, to the 12 months of aging, the minimum time for the cheese to be enjoyed with mastery. In addition, the milk used is partially skimmed, creating a cheese that is low in cholesterol and sodium. Gran Formaggio is the first grana-type cheese produced in Latin America. The production process adheres to the entire classic Italian culture of manufacturing in order to arrive at the ideal granulation point and the delicate taste that is distinctive to it. Gran Formaggio demands only the highest quality milk, from our own herd of carefully tended Holstein cows, to our lengthy aging period. It takes at least 12 months following our artisanal work, which combines long-standing traditions with the most advanced technology in the industry.
